Appenzeller Meule Vieux Extra Cheese is a hard cow's-milk cheese produced in the Appenzell region of northeast Switzerland. A herbal brine, sometimes incorporating wine or cider, is applied to the wheels of cheese while they cure, which flavors and preserves the cheese while promoting the formation of a rind.
This exclusive speciality is guaranteed to have been matured for 6 months. The maturing process is controlled by experts after 5.5 months, and only the best of the best are selected. The extra spicy flavour and fully developed aroma come from intensive care for using the mysterious herbal brine over six full months.
