The classic German cheese cake (Käsekuchen) is sure to be a big success when using the RUF Cheese Cake Helper. Simply add Quark and bake.

 

Baking instructions:

Crust: Mix 200gr flour, 3g baking powder, 75g butter, 75g sugar, 1/2 tsp vanilla, 1 egg and transfer to a 260-280mm removable-bottom tart pan. Roll and press firmly 2/3 of the crust on the bottom and shape the remaining 1/3rd on the edge until approx. 30mm up on sides of the pan.

 

Filling: Add 750g Quark, 100g sugar, 4 egg yolks, 1/2 tsp vanillin sugar, 1/2 tsp lemon peel into a bowel and mix until smooth. Beat 4 egg whites until firm and mix into the quark mixture. Add one bag of Ruf Cheese Cake Aid and 250ml of milk. Mix well and fill into the baking pan, laid out with the dough for the crust and bake at 175C on the middle rack for approximately 70 minutes. Enjoy!
