Ammonium bicarbonate (also known as baker's ammonia or salt of hartshorn, Hjorthornssalt in Swedish, Hirschhornsalz in German) is an ingredient used in baking in many European countries. It was originally made from deer antlers, hence the Swedish name, but now ammonium bicarbonate is used instead.
