Ammonium Carbonate (also known as baker's ammonia or salt of hartshorn, Hjorthornssalt in Swedish) is an ingredient used in baking in many European countries. It was originally made from deer antlers, hence the Swedish name, but now ammonium carbonate is used instead.

It is a raising agent and helps to create lovely light and airy biscuits and breads. 35g
