Lingonberry meatballs
75ml rolled oats
1 tablespoon potato or corn flour
75ml lingonberry jam
50ml water
400g minced meat (half pork half beef or to your taste)
200ml chopped onion
1 egg
1 1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Mix oatmeal, potato starch, lingonberry jam and water in a bowl. Let stand for ten minutes.
Stir in the mince, onion, egg and spices. Shape meatballs and fry in a frying pan or bake in the oven at 200 degrees for about 15 minutes.
Serve with mashed potatoes. Serves 4.

Lingonberry Snow ('Puolukkalumi')
200ml lingonberry jam
1 tbsp lemon juice
2 egg whites
1-2 tbsp sugar
Whisk the egg whites and lemon juice until fluffy, then add sugar until the mixture is stiff.
Very gently fold in the lingonberry jam and serve immediately.
Lingonberry Quark
A simple but divine Finnish dessert!
200g Quark
200ml cream, whipped into soft peaks
1-2 tsp vanilla sugar
150ml lingonberry jam
sugar (optional)
Add the vanillin sugar into the whipped cream. Mix the quark and lingonberry jam into the cream. Taste and add sugar if required. Chill for at least 1 hour before serving. Decorate with some lingonberry jam.
