Blueberry Quark Pie

 

Base:

100g melted butter or margarine
75ml sugar
1 egg
250ml wheat flour
1tsp baking powder

Filling:

100ml milk
250g quark
1 egg
100ml sugar
1tsp vanillin sugar
zest of 1 lemon
300ml blueberries, fresh or frozen

Beat the egg, sugar and melted fat together. Add flour and baking powder.
Put in the fridge for a few minutes (so it is easier to handle).

Mix all the filling ingredients apart from the blueberries into a smooth mass .

Press the base into a buttered baking dish (24cm diameter).

Place the blueberries on the base and then pour the filling mixture on top and spread evenly.

Bake in the oven at 200C, for about 40 min. Let cool before serving. Serve with a dollop of cream or sour cream and blueberries.
