Lemon Mousse (Citronfromage) is a classic Danish dessert, a familiar old friend to all Danes. It can of be served any time of the year but especially in summer. The mousse is a beautiful pale yellow color and it is filled with air making it a very light dessert. The tart lemon flavor is complimented with sweet whipped cream which gives it nice contrast. Make sure to serve the Citronfromage cold with a dollop of whipped cream and enjoy! Makes 4 portions.
Preparation Pour 250ml water into a bowl with high edges. Add the powder and beat with a hand mixer, first briefly at low speed then at highest speed for 3 min. Pour the mixture into 4 small serving glasses and put them in the fridge for at least 1 hour. Tip: If a firmer consistency and milder taste is desired, the lemon mousse can be prepared with skimmed milk.
