SAFKA'S EASY SCANDINAVIAN WALBURGIS MENU

Walpurgis Night (Walpurgisnacht in German, Valborg in Swedish, Vappu in Finnish, Volbriöö in Estonian) is a traditional spring festival on 30 April or 1 May in large parts of Central and Northern Europe.


Hors d'oeuvre:


Rye chips with cod roe creme

Entree:


Herring platter with hard boiled eggs and gourmet potatoes

Main:


Frankfurters with potato salad and pickled cucumber salad

or


Meatballs in gravy with mustard gherkin relish, mashed potato and lingonberry jam
